I'm at work right now so I can't try it but a thought occurred to me. With the Turnkey board active, would it be possible to SYSGEN a 64K CP/M system rather than "waste" 1K with a 63K system?

Yes, you are correct. Boot with the Turnkey module enabled and run MOVCPM (or MOVCPM8 if your running version 2.2b). You'll see it creates a 64K build of CP/M.

:) It's just cosmetic, though. I have 30K available in MBASIC so I know CP/M is using the whole 64k.

Interesting! I've run MOVCPM before and verified it says it's building a "64K" CP/M, but I've never then SYSGEN'd that to disk and seen what the cold boot message shows.
